How to choose

Which revenue stream should you fix first?

Most independent venues run all three businesses at once and market only one of them properly. A pub with a function room sells weddings by word of mouth. A restaurant with six letting rooms leaves the rooms to the OTAs. A boutique hotel with a serious kitchen advertises the bedrooms and lets the restaurant fill itself. In each case the neglected stream is usually the one with the highest margin and the least competition in search.

We prioritise by three things: the value of a single booking, how far ahead people search for it, and how much of that demand you currently capture. Weddings and events carry the largest average value and the longest lead time, so they reward a dedicated page and a real enquiry journey. Covers are high-frequency and decided within hours, so they reward local search, profile accuracy and a booking step that works on a phone. Direct room bookings are the margin play — every night moved off an OTA keeps the commission you have already earned.

Start with weddings and events if…

You have a function room, barn, terrace or private dining space that sits empty midweek, enquiries arrive by phone or Instagram DM rather than a form, and you cannot say how many enquiries you received last month. Start with covers if…

Your kitchen is under-trading on weekdays, you rely on walk-ins and delivery aggregators, or you do not appear in the local map pack for the obvious searches in your town. Cover growth is the fastest stream to move because demand already exists — it is being routed to somebody else.

Start with direct bookings if…

More than a third of your room nights arrive through an OTA, your own site is outranked for your own venue name, or your best rate is not visibly available direct. Shifting even a small share of nights to direct booking changes profitability without needing a single extra guest.
